Ingredients

  • 1-2 pound chicken breast cut into 1 inch strips
  • 1/2 cup peanut butter smooth not chunky
  • 1/2 cup soy sauce
  • 2 tablespoons garlic
  • dashes hot sauce or siraccha
  • 1/4 cup lemon juice

Supplies

  • 1 mixing bowl
  • 8 metal or wooden skewers soak wooden skewers in water for 15 min before using

Directions

This is so easy even I can do it. They taste GREAT and are quick to fire up on the grill. To top it off, they are also pretty healthy. As a result, we’ve been having these at least once a week.

1) Combine all ingredients in mixing bowl.
2) Mix ingredients with whisk until completely smooth.
3) Marinate chicken in mixture and refrigerate for a minimum of 1 hour.
4) When you are ready to cook, preheat grill to Medium or Medium High.
5) Skewer chicken and grill for 5 minutes on each side.

These are great with marinated and grilled vegetables, and maybe some brown rice if you are looking for a starch. Enjoy!
